16 - 1/4 cup water

→ Garnish

17 - 2 teaspoons toasted sesame seeds
18 - Fresh coriander or scallions, finely sliced

# Steps:

01 - Combine sliced beef with soy sauce, cornstarch, sesame oil, and black pepper in a bowl. Mix thoroughly and allow to marinate for 10 minutes.
02 - Cook noodles according to package instructions in boiling water. Drain thoroughly and set aside.
03 - In a separate bowl, whisk together hoisin sauce, dark soy sauce, oyster sauce, honey, and water until well blended.
04 - Heat a wok or large frying pan over high heat and add a small amount of oil. Stir-fry the marinated beef for 1 to 2 minutes until meat is just browned. Remove beef and set aside.
05 - In the same pan, add additional oil if needed. Sauté garlic and ginger until fragrant. Add bell pepper, carrot, and spring onions; stir-fry for 2 to 3 minutes until vegetables are just tender.
06 - Return beef to the pan. Pour in prepared sticky sauce. Toss to coat ingredients evenly and allow sauce to bubble for 1 minute.
07 - Add cooked noodles to the pan. Toss all components together over high heat for 1 to 2 minutes until noodles are well coated and glossy.
08 - Divide among serving dishes and garnish with toasted sesame seeds and freshly sliced herbs.

02 -
  • Once, in my rush, I cranked the heat too high and toughened the beef—it cooks quicker than you expect, so always keep an eye out!
  • If you forget to rinse the noodles after boiling, they’ll clump, which makes tossing them a nightmare and ruins the final dish.
03 -
  • If your noodles have stuck together, a dash of warm water and gentle fingers will loosen them right up before you toss them in.
  • A little extra hoisin on the side lets everyone adjust their own sweet-savory balance at the table.
